Under supervision, perform cold food preparation to include: cutting, slicing, chopping, peeling & preparation of sandwiches, salads & variety of express to go meals. Follow recipes, build charts & photo samples to create ready to eat products such as salads, sandwiches, wraps, parfaits & other packaged items as assigned. Utilize correct tools & processes to meet presentation expectations. Scale portions & ingredients for accuracy & exercise all precautions to eliminate possibility of food cross-contamination or temperature abuse during assembly. Produce assigned product within acceptable time restrictions. Prepare food in mass quantity (chopping, slicing, & dicing) for internal use for food production & delivery to dining operations across campus. Must be able to proficiently assemble, use & clean large specialty food processing equipment in a frequent task rotation environment. Stock dining room utensils/dishes and provide dining room attendant duties as assigned. Perform a variety of cleaning, stocking, organizing, preparing, displaying & arranging responsibilities as they relate to food service. Stock dining room utensils, dishes, napkins, beverages cups, salt & pepper shakers. Cut, plate, and/or frost baked goods to serve at dessert station. Stock & replenish beverages at stations, cereal granolas, ice creams, whole fruits, soups, at various stations & self-service bars. Help receive, stock, & rotate product. Keep work area clean & debris free. Identify & correct hazards. Set-up/clean equipment, worktables, sinks & drains in kitchen areas at beginning & end of shift. Ensure compliance with State & Federal Sanitation Guidelines. Use appropriate cleaning agents to perform general kitchen maintenance. Notify management of maintenance problems. Independently safely use, assemble, disassemble & train others to use kitchen equipment following University Dining Services standards.

- Basic food preparation experience in a commercial dining facility.

- Skill to maintain a sanitary, safe and organized personal work area using specified cleaning materials and solutions.
- Skill to verify proper concentration of sterilized solution using test strips.
- Skills to follow proper procedures for lifting, handling broken glass and working around industrial kitchen equipment; and to use wet floor signs when mopping floors or cleaning up spills.
- Skills to differentiate products' composition, biodegradability, nutrition, etc.

Work Environment
